Weird computers that I (somewhat) enjoy using
I discovered that (apparently) a few people actually have read this blog before... so I might as well post something. I guess I can talk about the weird computers I've accumulated recently! This one will be a bit fast-and-loose, so forgive me if I re-write parts of this in the near future. (This is also my first attempt at using IPFS for image hosting, so bear with me if images are a bit slow to load...) Pandemic Cooking 3: low-effort edition
I’ve posted dishes I’ve made that are a bit more elaborate than what I usually eat at home. So here’s a more realistic list! Air fryer chicken Pretty easy. Grab some breasts or thighs. Flatten them (or butterfly them). Season well (I use salt and pepper, but also use adobo, mojo, or blackened seasoning as well). Cook them for the necessary amount (usually somewhere in the 12-15 minute mark). Get some sides (maybe some leftover rice, or some assorted vegetables - I like roasted Mexican squash)...

Journaling: N months later
tl;dr: I don't journal as often as I wanted to, but the little I have done, has been quite beneficial. I know that many people want to keep a daily journal, where they mention all the thoughts and occurences that go on during their day. Unfortunately, I knew myself well enough to know that was never going to happen. I'm too scatterbrained to remember to write things down on a daily basis. However, I did manage to teach myself to journal whenever I have a thought that needs to be taken out of ...

Journaling: three months later
I started keeping a journal in November. What has the past 3 months been like in that regard? I pretty much failed in my goal of keeping a DAILY journal. I was able to do so for the first few weeks, but more often than not, I just didn't feel like I had much to write. Although I don't keep a daily journal, I do feel that, when I do write something down, it has a bit more gravity. A bit more meaning. Something to refer to later on, where it might be needed. As mentioned previously, getting the...

Standing ovation
As of this week, it's been 10 months since I've been working from home, due to the pandemic. It has had its ups and downs (I can get into that another time). One of the biggest adjustments was where at home I would work. While I had a desk, it was pretty small, and not all that comfortable. I've had issues with my lower back for a while, and I was better off working on the couch or bed, even though those aren't as great as they seem as first (it's kinda hard to type while laying down). It took w...

Clarity (redux)
(Based off a longer, and much more poorly written, essay) I can't say that 2020 was the worst year I had lived through, but it was one of the worst. In less than 3 months, things fell apart for everyone. The COVID-19 pandemic changed everything. Political and social strife affected people more than I thought it would have. Social distancing became social isolation for some. But even smaller, more personal things affected everyone, myself included. My social life (in the sense of finally having...

Pandemic cooking: the dishes (part 2)
It's the first day of 2021, and COVID-19 is still a thing. Meaning that I have plenty of time to cook some more dishes! Pozole One thing my mom makes a few times a year is pozole. Much like a lot of stuff I've been cooking, it's a total comfort food. More importantly, it's a dish we often eat during the holidays. So for a sense of normalcy, I decided to cook some up for myself. There is a bit of prep, but it was about 30 minutes of roasting vegetables, rehydrating peppers, chopping, and blend...

Pandemic cooking: the dishes
A quick look at some of the better dishes I've cooked during the pandemic. Lentil curry (dal/daal) I've always loved lentils. Since I was a child, my mom would make a simple lentil soup, with some peppers, tomatoes, onions, and some kind of protein (often some hot dogs). It was delicious then, and it's still good now. I've occasionally cooked some lentil soup in my pressure cooker, and it's so comforting. So when I heard about lentil curry, I was quite excited. It's quite easy to make, doesn'...

Journaling: One Week In
At the end of last month, I decided that keeping a daily journal would be something helpful, especially during these times. Overall, here's how it's going so far. I actually haven't kept up with DAILY entries. I skipped over the weekend, mostly because I forgot to log anything. But I've kept going so far. I have so many thoughts racing through my mind these days. It's a relief to get them on paper, and out of my head. Actually makes it easier to sleep at night. Adding to the previous point, g...

Pandemic cooking: accumulating appliances
I've been pretty bored these days. No better time than the present to start cooking again! I managed to get some new appliances in the past year. Why not just use the stove? The stovetop (and oven) I mean, it’s already there. That’s the main advantage. The other advantage is the fine control you have over heat compared to other cooking methods. It’s also the most versatile: with few exceptions, every thing you would cook can be made on either the stovetop or oven. But you wouldn’t be buying ot...

Hello world
It's been a while since I've had a blog. Let's fix that.I've tried keeping a blog many, many times in the past, but have never managed to keep it alive for longer than a few days. I also tried self-hosting one, and that didn't last very long, either. This time around, I've been simultaneously keeping a journal, making it so much easier to have something to write about. And Standard Notes makes it way too easy to post these journal entries.I can't promise I'll be posting very often, but I'm looki...
